No Frills Earth-friendly Grilled Cheese

Ingredients:

grilled cheese

 

  • 2 slices of bread (sourdough pictured below)
  • 2 tablespoons dairy-free cheese (Miyoko VeganMozz recommended & pictured below)
  • 1/4 teaspoon olive oil
  • 1 tablespoon egg-less mayonnaise (Just Mayo recommended)
  • 2 small tomatoes, sliced

 

Directions:


Lightly grease the outside of both slices of bread. Spread cheese on one side of bread and place in frying pan or skillet on medium heat. Place other slice of bread on top. Flip when bottom slice is golden brown. Repeat until both sides are golden brown and cheese is gooey.


While the sandwich cooks, slice the tomatoes. You can add or substitute other veggies if you like. Pickles, avocado and grilled onions are also great additions.


Remove the sandwich from heat. Spread mayo inside top piece of bread and add tomatoes. Serve hot. This sandwich is great on its own or paired with tomato soup or a crisp kale salad (pictured with pickled beets added!).
