Vegan Tuna Fish Sandwich

  • 1 large carrot
  • 2 cups chickpeas (garbanzo beans)
  • 1 small onion
  • Juice of one lemon
  • Salt and pepper to taste
  • 2 teaspoons olive oil
  • 2-3 heaping tablespoons of powdered hijiki seaweed (optional)
  • vegan mayonnaise to taste
  • bread
  • your favorite sandwich fixings



Chop carrot in cubes and put in food processor, add 2 cups of soaked (at least 24 hours) and cooked chick peas (garbanzo beans). Chop the onion in cubes and add to food processor with lemon juice, salt, black pepper, olive oil and optional 2-3 heaping tbsp of powdered hijiki seaweed. Pulse everything together until it has the consistency of tuna fish salad. Put mixture in a separate bowl, add vegan mayonnaise. Toast the bread, add your favorite sandwich fixings (e.g. mustard, onion and tomatoes) and enjoy.
